Ecuador Cuisine

Ecuador is known by the variety of its gastronomy. The main dishes in the country are soups and sauces made with chicken or vegetables. If you prefer a more exotic dish, seasoned, baked rabbit is definitely one of the more famous of all. It was brought down from the time of the Incas when they partied and celebrated in their temples.

The typical dishes like the “llapingachos”; with fried potatoes mashed with cheese, or the “humitas” made with tamales and fresh corn are well seasoned.  Another of the country’s specialties is pork, which is served in almost every restaurant.

Local fish is served including trout. These dishes are generally served raw, seasoned with lemon. If you would rather, try some shrimp and seafood. It is recommended that you be careful to only eat in recommended establishments where they follow standards of good hygiene.

The most sought-after dessert, characteristic of the region, are those made from sweetened, condensed milk, and the very wide variety of wonderful tropical fruits.

Drinks are usually made out of fruit juices.  For those who like something stronger, the traditional “aguardente” (burning water), a liquor made from sugar cane is very reasonably priced.
